SPRINGCOCKTAILS
This is the first of my vegan egg white cocktail series and I am already obsessed. I wanted to make something delicious for my lovely vegan friends out there so I used aquafaba to create the gorgeous layer of foam on the top. You can make your own kiwi puree either in a juicer or a blender, however I preferred using the juicer in order to keep the vibrant green color. Then I added back a few of the seeds for texture. This cocktail is just as good non vegan with egg white so feel free to substitute!
I created this Paloma using fresh squeezed pomelo juice. Although I do love the alliteration in the name, I also chose to use this fruit because it is a delicate shade of pink and a little milder than the grapefruit. For this version, I added one oz each of tequila and mezcal, and rimmed the glass with tajin for a smoky but refreshing spring treat!
This is my copycat recipe of the delightful Strawberry Fields cocktail from The Tipsy Pig. I added muddled basil to complement the sweetness of the strawberry puree to create a refreshing beverage perfect for springtime.
Caipirinhas are one of my all time favorite cocktails to sip by the pool, but they definitely can sneak up on you. In this version I have hacked it so you can sip them by the pool all day! I muddled mint with the lime, added two oz of cachaca, an oz of fresh squeezed blood orange juice, and topped it off with seltzer.
This gorgeous purple cocktail gets its color from Creme de Violette, a deliciously floral violet liqueur. Violets bloom in early spring so I felt this was the perfect time to showcase this colorful cocktail.
